Ew. It’s cloudy again… Why does this keep happening? Well, if it’s cloudy where you are, you should definitely make these cupcakes to brighten up your day!
For some reason my parents always have over-ripe bananas. It’s probably because my Dad is the only one who eats them (except when I’m home). So naturally I had to make something with the poor things. I found this recipe on the blog How Sweet It Is and then hunted around for a yummy Nutella-based recipe. Anywho, they turned out pretty yummy! And they have to be healthy right? They’ve got bananas…
Banana Cupcakes (from How Sweet It Is)
1 1/4 cups flour
2 teaspoons baking soda
1/4 teaspoon cinnamon
1/4 cup softened butter
1/2 cup sugar
1/4 cup brown sugar
1 teaspoon vanilla
2 ripes bananas, mashed
1/4 cup buttermilk
Preheat oven to 350.
Cream butter and sugars together until fluffy. Add vanilla and eggs, mixing until thoroughly combined. Add mashed banana. In a separate bowl, combine dry ingredients.
Add half of dry ingredients to banana mixture. Stir in buttermilk. Add the remaining dry ingredients. Pour into cupcake pans.
I used mini cupcake pans, and baked for 15 minutes. Makes 24 mini cupcakes.
** I used regular sized muffin pans and baked them for 20 minutes.

Chocolate Hazelnut Cream Cheese Frosting (from Food Network)
8 ounces cream cheese, softened
1/2 cup chocolate hazelnut spread (recommended: Nutella)
1 teaspoon vanilla extract
3 cups powdered sugar
Add the cream cheese, chocolate hazelnut spread and vanilla extract to a large bowl and beat with a hand mixer until smooth. Slowly mix in the powdered sugar, scraping down sides of the bowl, as needed, until the frosting is smooth.
I tried to ice them nicely but didn’t have the proper icing bag parts… So they turned out a little patchy but still delicious!
